Friday's recipe: Scallop carpaccio with vanilla and passion fruit

Our chef suggests an idea for your Christmas meal or simply to treat yourself!
This week, scallop carpaccio with vanilla and passion fruit.
Ingredients for 4 people:
- 12, rue Saint-Jacques
- 1 organic yellow lemon and 1 organic lime
- 12 cl of olive oil
- 1 vanilla pod or a pinch of Madagascar vanilla caviar
- 4 passion fruits
- 5 sprigs of chervil
- Fleur de sel, pepper
Instructions:
- Rinse the nuts and place them in the freezer for 20 minutes to firm them up.
- Mix together the vanilla seeds, 10 cl of olive oil and the pulp of the passion fruits.
- Slice the scallops into very thin strips and arrange them on a serving plate.
- Drizzle with olive oil and add the passion fruit.
- Decorate with the 2 lemon zest strips and a few herb shoots, season with salt and pepper.
- Enjoy it immediately!
