How to recognize a quality vanilla bean?
As a consumer, here are the essential criteria for identifying an excellent Bourbon vanilla bean from Madagascar:
- Its appearance
The pod should be dark brown to black, smooth (or slightly wrinkled), and if possible, unsplit. A slight sheen is a good sign of freshness.
- Its texture
It should be supple, plump, and flexible like leather. If it is dry and brittle, it has been poorly stored or improperly aged.
- Its aroma
The fragrance should be intense, heady and richly vanilla-scented, without any musty or acidic odor.
- Its humidity level
"Gourmet" pods generally have an ideal moisture content (around 30-35%), which guarantees their suppleness and their richness in vanilla caviar (the small black seeds).
